You can smell it across the street.\u00a0 Something bubbling with chilies, chocolate, cinnamon, something else\u2026cloves??\u00a0 Omigod.\u00a0 The nuns are making mole and chicken for tonight\u2019s dinner for the migrants.\u00a0 I know I\u2019m supposed to be over at the clinica saving lives, but I simply must step into the kitchen and take in these aromas.\u00a0 One of the sisters is wiping away tears from the garlic and onions crackling in the cooking oil.\u00a0 She shows me the menu for dinner which is at 4 PM.\u00a0 Chicken with mole, rice, a soup of vegetables and rice, and fruit.\u00a0 Tortillas, of course, to mop up the juice.<\/p>\n

Chicken fixin's<\/p><\/div>\n

I see \u201cburn man\u201d sitting on the curb.\u00a0 This fellow was in dire straights a few short weeks ago, with 2nd<\/sup> and 3rd<\/sup> degree burns over most of his back.\u00a0 He shows our group his wounds, and waits for the clinic to open for a dressing change.\u00a0 He looks fleshed out a bit—he has been eating regularly at the comedor.\u00a0 His burns are healing.\u00a0 Trying to hit us up for money, he wants cigarettes and a Coke.\u00a0 We tell him, just eat the food here—this is what you need to get back on your feet.<\/p>\n

Lorena, a volunteer cook, invites me to help pull chicken off the bones for the mole dish.\u00a0 Her hands glisten with chicken grease.\u00a0 I sit with 3 other women and try to keep up with their rapid banter as they joke in Spanish.\u00a0 I laugh with them, not knowing quite what the joke is, but I\u2019m happy to be here up to my elbows in grease.<\/p>\n

After a few hours of talking with migrants, Lorena presents me and others with bowls of steaming chicken, mole, and rice.\u00a0 It is the best I have ever had.\u00a0 The sisters could be stars on the Food Network.\u00a0 The world is a better place with a bowl of chicken and mole in front of you.<\/p>\n
